Tamarind Kernel Powder
Tamarind powder is produced from the Kernels of Tamarinds. It is used in the manufacture of the tamarind gum. Tamarind gum is seed gum with potential industrial application. It is obtained from the seed kernels of the tamarind. Free, tamarind indica, which is cultivated in India and Bangladesh. The seed are a by product from production of tamarind pulp which is used as a food flavour. Seed production is 1,50,000 t/year. The seeds consist of a hard outer testor which can be removed by a variety of heating and milling procedures and a kernel (70%) which after separation is milled to give tamarind kernel powder consisting of gum 65% protein 15-20%, Oil 6% and Ash 3%. Tamarind trees (Tamarindus indica) are found naturalized almost throughout the plains and sub Himalyan tracts of India. The pulp of tamarind fruit known as emli is used as an acid flavouring agent. The seed constitute 34 % of the fruits and contain on an average 60% starch. Statistical information on the annual production of fruit pulp is not available. But of seed is upto some extent available. Dandakarnya region in M.P. and Koraput district in Orissa are also very rich in tamarind trees. This industry is resource based requiring raw materials in bulk and should be located near the source of raw materials.
