Barley, wheat rye, oats, sorghum,. corn and rice and malted throughout the world, but only the first three are malted commercially in any quantity. The growing of barely and wheat is referred to in the earliest records of agriculture and the use of barley for the production of fermented beverages dates back to the ancients. It is not clear from the records just when the germination of grains to produce starch - splitting enzymes was discovered, but reference to the use of germinated barley or malt is recorded in the history of the egyptians. For the production of beer or other fermented beverages, barley was brought with almost the first settlers, principaly for the production of malt for making of beet in U.S.A. Since that time the uses of malt have gradually increased until the malting of barley and other cereal grains has become an extensive industry.
